Description

La Ratte is grown for flavour first. The small, slender fingerling tubers have golden skin and deep yellow flesh with a smooth, buttery texture and distinctive nutty character. It is the sort of potato that needs very little done to it: steam or boil gently, add butter and salt, and let the variety provide the flavour.

Yields are generally lower than modern commercial varieties and the irregular fingerling shape makes mechanical handling less straightforward, which is part of why La Ratte has traditionally commanded a premium. Its firm texture also makes it excellent in salads and for sautéing. This is a specialist eating variety, not a high-yielding chip potato.

Planting & Growing

Chit seed potatoes in a cool, bright, frost-free place if you want to encourage an earlier start. Plant from March into April once soil conditions are suitable.

Plant approximately 10–15cm deep, allowing about 30cm between tubers and around 60cm between rows. Earth up developing shoots to keep tubers covered and maintain an even water supply while tubers are forming.

Variety-specific advice: Do not overcrowd the crop if you want well-shaped fingerlings. Lift carefully to avoid damaging the long tubers and use relatively soon for the finest texture.

Harvest: Begin checking from early to mid-summer, depending on planting date and conditions.
