Rooster Seed Potatoes
From £6.99
Ireland’s best-known modern potato: a red-skinned maincrop with yellow floury flesh, deep earthy flavour and exceptional versatility from boiling to roast potatoes and wedges.
Description
Rooster was introduced to the Irish market in 1991 after breeding at Teagasc Oak Park and rapidly became the dominant fresh potato in Ireland. Its recognisable red skin, yellow flesh and reliable crop performance helped make the name almost synonymous with an Irish all-rounder.
The flesh has relatively high dry matter and a floury, earthy character. It boils well with sensible handling, makes smooth mash and excellent roast potatoes, and is particularly good for wedges and home fries. This is a variety whose selling point is not novelty but proven flavour, versatility and strong performance in Irish growing conditions.

Planting & Growing
Chit seed potatoes in a cool, bright, frost-free place if you want to encourage an earlier start. Plant from late March into April once the soil is workable and conditions are suitable.
Plant approximately 10–15cm deep, allowing about 35–40cm between tubers and around 75cm between rows. Earth up developing shoots to keep tubers covered and maintain an even water supply while tubers are forming.
Variety-specific advice: Grow as a full maincrop and allow skins to set before lifting for storage. Its broad kitchen use makes Rooster a good single-variety choice for households that do not want separate salad and floury potatoes.
Harvest: Allow a longer season and check tuber development from late summer into autumn.
